Avocados Stuffed with Crab Rémoulade
Ingredients for 16-18 servings. - Crab meat
- 5 Large tomatoes
- 1.5 kg avocado
- Chives 1 bunch
- 1 lime
- 20 Pitted olives
Ingredients for remoulade sauce: - Mustard 2 tbsp
- Fat cream (from 33%) 100 ml
- Sherry vinegar
- Sea salt
- Coarse black pepper
Disassemble the crab meat into fibers, finely chop the olives. Remove seeds from tomatoes and cut into small cubes. If the tomatoes are too tough, blanch them (boiling water, cold water, remove the skin). Finely chop the chives, mix everything gently. Cooking the sauce. In a separate bowl, combine mustard, cream, vinegar, salt and pepper. Season our "salad" with sauce. Cut the avocado in half and remove the pit. Place crabs in each half and drizzle with lime or lemon juice. It turns out terribly delicious.
